Hibernal is an interspecific hybrid bred in Germany. It is a fast-growing variety with shoots reaching up to 6 m. It is characterised by abundant fruiting and a strong mineral aroma. The light grapes ripen late, in the second half of October. Classified as a processing grapevine, Hibernal is easy to grow, low-maintenance, healthy and frost-resistant, making it suitable for both professional growers and amateurs. It prefers warm, sunny sites sheltered from cold winds. The best soil is fertile, sandy-loamy and slightly moist.
Flowering: The variety flowers from May to June. The small, light-yellow flowers form long inflorescences. Hibernal grapevine is self-pollinating, producing both male and female flowers. The leaves are large, 3-lobed, slightly ruffled, with moderately deep side sinuses. In summer, they are intensely green, turning golden-yellow in autumn and falling off in winter.
Ripening and fruiting: Hibernal is a late-ripening variety. Harvest is best started in mid-October. Light-coloured, round berries form medium-sized clusters. Although the fruits are not large, the vine compensates with abundant yields. Despite the late ripening period, the fruits accumulate high sugar content – above 20%. Thanks to this, Hibernal is both a processing and dessert variety.
Conditions and requirements: Requires sunny or semi-shaded positions sheltered from wind. In strongly sunlit sites, the plant grows vigorously, flowers abundantly and produces numerous fruits. The variety tolerates different soil types but grows best in sandy-loamy, moderately moist soil with a slightly acidic pH.
Care: Easy to grow, does not require special treatments. When planting, a spacing of 1.5–2 m between plants should be kept. To ensure good establishment, prepare the soil by mixing garden soil with well-composted compost. Hibernal is resistant to diseases, pests, and low temperatures (down to -25°C). It is recommended to prepare the plant for winter, especially in the first three years by making a 5–10 cm mound of fertile, well-draining soil. The shrub grows evenly, so only medium or short pruning is recommended.
Use: Hibernal is mainly a wine grape variety, but its fruits can also be eaten fresh, e.g., as a dessert addition. The fruits are ideal for producing straw wine (from partially dried grapes) and ice wine (from frozen grapes).
